The tandems of Prof. Gary Raymond Tangonan and Gerald Banton for the Healthy Pasta Competition, and Prof. Nikki M. Toga and Nick Angel Sarile for the Mystery Ingredient Competition brought home awards after finishing 4th Place, and 2nd Place respectively at the 15th Philippine Food Expo 2023 held at the SMX Convention Center Manila on April 28-30, 2023.

Prof. Gary Raymond Tangonan and Gerald Banton earned the approval of the judges through their For the Love of Maria Aurora (Fern Cavatelli topped with tofu wrapped in Nori sheet with Roasted butternut squash and roast bell pepper coulis) that featured fern as the highlight ingredient of the pasta. On the other hand, Prof. Nikki M. Toga and Nick Angel Sarile’s Standard Course Meal highlighted purple yam in Ensalada with Seared Purple Yam, Cucumber, and sour Ube Dressing for the appetizer; Pinangat with Purple Yam Puree for the main dish; and Deconstructed Ube-filled Carioca for dessert impressed both the palates and eyes of the judges.

A maximum of 10 tandems were allowed to compete in both Healthy Pasta and Mystery Ingredient Competitions from the 33 campuses that participated. According to Dr. Cindy G. Villaroman, dean of the College of Hospitality and Tourism Management, a campus was only allowed to participate in a maximum of two (2) competitions.

Other participating institutions included Angeles University, Arellano University, Asian Institute of Maritime Studies, Cavite State University, Centro Escolar University Makati, Colegio de San Juan de Letran, De La Salle University-Dasmariñas, Dr. Yanga’s College, Inc., Dr. Carlos S. Lanting College, Emilio Aguinaldo College-Cavite, Emilio Aguinaldo College-Manila, Far Easter University, FEU-Cavite, FEU-Roosevelt, Holy Angel University, Jose Rizal University, La Consolacion College Manila, La Consolacion College Tanauan, La Flamme Bleue Center for Culinary Arts, Manuel S. Enverga University Foundation, Metropolitan Occupational Science and Technology Institute, National College of Business and Arts, National University College of Hospitality and Tourism Management, Polytechnic University of the Philippines, Southville International School with Foreign Universities, St. Dominic College of Asia, St. Scholastica’s
College, STI Pasay-EDSA, University of Perpetual Help System, University of Santo Tomas, and
Valenzuela City Polytechnic College.

“We are happy and proud because our faculty members and students performed well on a national level competition side-by-side with other universities in the country,” added Dean Villaroman.
